Breakfast foods - I bought 10 dozen eggs at Jewel's $.69/dozen sale, so we need to start figuring out ways to eat them even more than we did before. I'm not worried about using them up, but looking forward to cheap protein to hopefully help make the expensive meats last longer.
Been focusing on eating down the freezer stuff this month, successfully. It's been nice to see the stuff I've bought on sales get used up.
However, pretty soon I'll need to start looking for more deals because we're getting closer to the bottom of the barrel.

Took out a steak again for DH, don't think he will complain. I'm having a 1/2 a chicken sandwich with avocado and some soup.

Ugh. Tomatoes were good. Chicken was snoresville. Someone needs to invent a low cal, low carb cream sauce. Those were the last of the thighs. I'm taking a break from thighs for several weeks. I just can't do it anymore.

Rice sounds like a good idea for them to have. Sadly no room in my plan today for that. Not even sure I can call what I'm having fajita without the torilla- more like chicken with peppers and onions in fajita sauce, lol.

Sounds yummy nezz ... have it with a lot of lettuce/greens? Maybe if you have bigger type of lettuce leaves you could make it a wrap? I managed to make the leftovers in the fridge last night stretch to cover everyone for dinner, so yay. Breakfast for dinner moved to tonight.

I was thinking of the lettuce wrap:) I have a new head of lettuce that we need to eat before we leave for vacation on Saturday- I am pretty sure DS isn't going to be making himself a salad while we are gone, lol.
For lunch or a snack I was going to use up the last of my spaghetti squash to see if I could make them into a pancit ( filipino noodle dish) with cabbage, carrots, onions and the leftover chicken I have saved. We'll see how that goes! Been wanting some asian food.
edit: it was good! stir-fried a bit of chicken with peppers, onions, garlic and carrots in a bit of coconut oil- added the spaghetti squash and some fish sauce/ soy sauce to and viola! no need for rice, this satisfied my crave! Yum. Happy girl!

On my own tonight DH headed to TN this morning. Stopped by SNS on my way home from work and found a 5 layer dip w/guac., beans, sour cream, salsa and cheese. Never had an avocado in my whole life. Pretty good I will try it again. Maybe some leftover beef soup later.
