Otherwise Chicken piccata for 2 , spaghetti squash for me instead of pasta.

Chicken Gorgonzola sounds good! Everything sounds better than this BD meal plan. Doing a modified plan right now- some BD - shakes and sort of a regular dinner with some healthier subs where I need to. Did DH's limit one chicken dish per week tonight, haha.

We buy a knob or two at a time, refrigerate in the veggie drawer, in an open container. We probably use more than the average consumer, but it will spoil if left too long. Occasionally, when we get LOTS at a deal too good to pass up, I peel it, cut it into more usable size chunks and freeze in a ziploc. that works great too! Peeling is really more just cutting off the thin skin, much easier if you pick out larger knobs of ginger ... of course the smaller offshoots are more of a PITA.... sometimes a few of those will magically just "fall off" when I'm picking it out at the store I hope you like the soup!

we had salmon with a honey/ginger/soy glaze with rice for the boys and mashed cauliflower for me, along with a salad.
we never really eat a lot of fish but I realized the 3 of us that are left at home are the ones who like it! so I guess we will be eating more of it.

More chicken for a snack. I think it was DF that said she was going to sprout feathers?! I'm right there with you. I had salmon for a "snack" yesterday, lol. I definitely need to squeeze in some beef in the diet sometime real soon!
I put the chicken on the Baby George rotisserie. Now I remember why I hardly ever used it. Stupid skewers never stay on. I finally used some silicone cooking bands to truss the chicken up on the spit so the legs and wings don't keep flying around in it. I told myself that if I didn't use it this year it was getting donated. At least I found a way to make it useful again.
