That looks good! I've actually never had flounder. What is it similar too? We're having chicken pot pie from Mariano's. I've heard good things! It's certainly easy enough.

I would say it is close to sole. I haven't had flounder in a while and I bought some with the Simply Balanced q and the Tripiche WT since they were also on sale plus they had the 10/50 GC's. They are not as flaky tender or meaty as cod, a very thin fillet like tilapia .
With cod we usually just sprinkle with lemon pepper, top with mushrooms then shredded cheddar cheese and broil till tender.
I make my people eat seafood and veggies but I don't make them eat Brussels sprouts even though I love them( Brussels!)

My dh loves Brussels sprouts. I just bought some today, at his request, for thanksgiving. Alas, he is being a jackass, so I may either throw them away or let the dog lick them. He's usually not a jackass, but tonight he is. I'm sitting in my car because there's nowhere to go in this damn condo! Let him worry that I'm out shopping.

The flounder recipe is good. When I said to DH you know what else would be good in here? He says "steak?" Haha I say, no some crab meat.
Then DH says Bacon, add bacon. Actually that wouldn't be a bad idea. The parm and mayo was a little sharp for me today and bacon could have added a nice smoky note to it. Definitely watch the broiler- it browns super quick.
adding crab would be more reminiscent of stuffed flounder, though I think you'd need 2 fillets stacked together to pull off stuffing anything , the fillets I got are that thin.

Baked Parmesan chicken, rice, asparagus. Also made some for my brother & SIL, since we've been at the hospital today & I figured she would be too tired to cook. I don't know why they would schedule an MRI for a 14 month old in the afternoon. Poor guy hasn't eaten since last night!

He's fine. He has a little cyst that was deeper than they thought. Relatively minor. Geez, I saw some kids that just break your heart today. Thankful it's just a cyst. So sad.
