pork chops, scalloped potatoes and corn. I was pretty much out of ideas today and pork chopps was the only thing I felt like. Ran to Target to get some and the gave me coupon hassles. Grrr... trying to turn the crappy mood they got me in.

I just put in a roast with potatoes, carrots and brussel sprouts. Will serve with cresents.

Last night was frozen chicken w/rice. Tonight...not a clue. I took some ground turkey out but that was only this morning LOL

Spaghetti squash- never had it before, but the Pinterest recipes look good. DH is not excited. I'll have to make him something "meat" to go with it.

Chicken & Rice. Yesterday I shredded two Rotis chickens. I took the parts & pcs and tossed in a huge pot with celery & onions for stock. It is smelling really good in here.

Kraft Mac n Cheese. Ewww-NEVAH!! Tho hubs loves that stuff...I hate boxed mac n cheese LOL I was looking for a recipe that didn't require me to make a roux but I couldn't find one LOL So...last night was my first time making roux. The roux itself came out pretty good (what the fish do I know, I've never made it before ) but....added the milk...then cheese...I had a huge clump of melted cheese. (thud)So, my friend & I think either my milk wasn't hot enough when I added the cheese OR I added the cheese too quickly...thoughts?? Hubs & I made it work-it was still tasty. We just spready the clumpy cheese over the top of the macaroni LMAO Tonight will be leftovers-still have some noodles from last week, so maybe those mixed w/smoked sausage...? Or mac n cheese LOL
