Tonight I'm going to make a cheesy pasta bake. Going to use a marinara recipe I found on Big Oven - let's hope it's good! I'm all out of jarred stuff...and I have a buncha canned tomatoes to use up. Maybe I'll take a loaf of cheese bread out of the freezer, too, now that I'm thinking of it...

Yesterday I made turkey (found one on clearance at Target $.49/lb!) so today it's turkey soup.

We had mahi burgers and kale/sweet potato/quinoa pilaf. DD16 has declared she is DONE with this family diet. I told her she should learn how to cook then, because this is it. Mahi burgers were good. Quinoa was a little weird.

I'm so tired of the bland food I've been making for dinners. Tonight: chicken stuffed w/ spinach, roasted tomatoes & provolone. 169 calories.
Three 4 oz bnls sknls chicken breasts 1tsp olive oil Crushed garlic Salt & pepper Italian seasoning Zest from small lemon 1 T lemon juice
Cut slit in each breast for "stuffing." Marinate for 15-30 min in above ingredients.
Grape tomatoes, halved. Toss with a teeny bit of olive oil & a teeny bit of salt. Roast at 350 for 10-15 min.
Sauté chicken breasts in about 1tsp olive oil. Let cool enough to handle.
Fold one slice of provolone (mine is generic, 60 cal) and stuff with fresh spinach & roasted tomatoes.
Bake in 350 oven 20 minutes or so. They were yum. 1/4c of cooked brown rice with 1/4 T butter and 2/3 cup of french green beans = 275 calories total. Not bad, totally filling.

cookiemomAUNTBEE - just had to share. I gave Dh 5 choices for dinner tonight, 1 being your chicken soup you shared the recipe for. Guess what he picked? Yep, the soup. Lol So that's what's for dinner tonight.

Tossed a boneless roast in the crock with peppercini, carrots and celery for Italian beef sandwiches on crusty buns. Sauteed petite green beans Orange slices

More leftover turkey. I'm liking this and kind of feeling like I should cook a turkey every Sunday and turkey soup every Monday and that's it forever. lol

More leftover turkey. I'm liking this and kind of feeling like I should cook a turkey every Sunday and turkey soup every Monday and that's it forever. lol I wish I even remotely liked turkey soup. We got 3 turkeys from work for thanksgiving- gave 1 away, still have 2. I make the best turkey when it's just me & Dh. Lol want my bones/scraps mashupmom ?
