Tonight will be Frito Pie. I brought back a big container of Coney Island sauce from a trip to MI and I want to use it all up. I am done with having it on hotdogs for now!

I've got a fridge full of leftovers that we need to eat up so they can pick between...
-Italian beef sammy -Pasta salad -Cut up fruit that's on the last day -Turkey sausage with german potato salad -Scoops with cowboy caviar

Cowboy caviar is a "salsa" like appetizer that gets served with Fritos Scoops or Tostitos Scoops. It's yummy and makes a TON!
Cowboy Caviar: dice the following: 1 cup celery 1 cup red onion 1 cup combo colored peppers jalapeno to taste Drain: 1 can shoe-peg corn 1 can black eyed peas 1 can pinto beans Boil: (until sugar is dissolved) 1 cup sugar 3/4 cup cider vinegar 1/2 cup veg oil 1/2 tsp each salt and pepper cool.........mix all together, chill overnight

That looks good, Val! This is the version I make:
Ingredients 1 (15 ounce) can yellow corn, drained 1 (15 ounce) can white corn, drained (or 4 ears of fresh sweet corn instead of 2 cans) 2 (15 ounce) cans black beans, drained and rinsed 1 cup chopped tomatoes 1/2 cup finely chopped cilantro 1 small red onion, finely chopped 1 red bell pepper, seeded and chopped 1 tablespoon minced garlic 1/2 cup lime juice 2 tablespoons olive oil 1/2 tsp salt
Mix & chill before serving, stirring occasionally. Serve with tostitos scoops.

Tonight we are having pasta, Italian sausage & a fresh mozzarella & tomato salad. Tomorrow- homemade pizza (with dough from Trader Joe's because I don't do dough.) Wednesday- Italian sausage sandwiches with fries/onion rings/whatever is open in the freezer. Beyond that, I am not sure. I need to get back into the swing of things in general & menu planning is at the top of the list. Friday I think we will go to Greek Town because I have a Groupon to use. Saturday is the little festival in the town we used to live in so we will probably go to that with friends.

Maybe leftovers-IDK about that, tho, cuz that's what we had for lunch, minus the tortillas I forgot to pack! Doh!
Considering I just had lunch like an hour ago, I don't think I'll be that hungry, so maybe just a snack...popcorn or cereal or something LOL

Work dinner at Wildfire but DH and DS fend for themselves- maybe Velveeta Cheesburger Dinner if they are motivated to cook, haha. Will not be surprised of they go for pizza.

Last night was just a snack. Tonight will probably be something frozen. Tomorrow will be seasoned ground turkey mixed up w/some roasted potatoes & veggies for me.
